So what's the difference between Instant Access and the regular monthly subscription? Which one would be better if I pay using a Google Play card via my smartphone?Thanks!..btw..the new updates have made the game better than ever!!

Insta access will last for 1 month and after that you have to repeat the process.

Whereas subscription will autopay and renew. If you have decided to take break from game you have to stop subscription else it will continue to pay whether you are playing or not.
