So are you saying that's what they are good for?
I have some pretty good kitchen knives I'm fond of my old Ontario. When I have that tuned in it cuts as well as ceramic but it's a little thicker and edge needs constant maintenance.

I use and like my ceramic knife quite a bit but its also the best sharpener I have ever used. One of my neighbors is a bladesmith and he was blown away by how good they are for sharpening.

Ceramic knives are fantastic in the kitchen, that's all I'll ever use anymore. So yeah -- they're great Kevy! They hold up pretty well, but I'd be lying if I said I haven't sharpened 'em. They do hold an edge very well though!

And also -- listen to Jacob. I tried his advice a few months back with the whole ceramic sharpening thing. Works like a charm. And it doesn't take too much off your knife either.
